Paella Mix [Recipe]

Saffron and pimentón are essential to the flavor of paella, Spain's versatile rice-based dish.

Ingredients
  • 2 pinches of saffron
  • 3 tablespoons pimentón (a mixture of smoked and sweet paprika)
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon cayenne pepper
  • 1 teaspoon ground black pepper
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground cumin 

Preparation
Grind the saffron threads using a mortar and pestle, and combine with the remaining ingredients. Makes approximately 6 tablespoons.
